Safe stain for canopy

Hey guys, I have a question, I'm going to be building a stand/canopy out of red oak, and i'm wondering what stain and polyeurathane is safe for the inside and outside of the canopy?

EDIT- Seems like the stain doesn't matter, Its the polyeurothane, so what is a safe polyeurothane?

I just built a canopy myself and finished it a few weeks ago.

I used Killz2 (white) to paint the interior. I used Minwax Oil Based Wood Finish to stain the exterior.

I used Minwax High Build Polyurethane to seal it. I ended up buying the "High Gloss" version since my stand had a shine to it. In hind sight, I would recommend getting the "semi-gloss" because the high was a bit too shiny looking.

DO NOT apply the stain or polyurethane inside the house. The vapors can cause serious damage to you and/or your fish.
