I typically leave a neighbor/friend/family member with the easy stuff... feed the tank every other day with preportioned food and add water to the top off container on my little tank 1x during the week. I also leave them with the number of an experienced reefer in case anything doesn't look quite right. There are several local reefers in your area, maybe one of them will stand at the ready for you in the event of an emergency.
If I'm going away for a week or less, I just leave the system with a full top off container, and go. I feel that you have more problems with having in someone else work on the tank than I would just letting them go a little hungry.
However, this can't always be done, some fish do need to be feed every day. An example would be anthis.
If it's going to be longer, yes, then you need a "fish sitter".
