When i was using a regular tank as a sump, I used the same methods as Phyl described to mark the "running", and "top-off"
also started to take water out to a bucket on the side, just to know the lowest point before the return pump starting to suck in air... then mark a line a little bit above...

like DaveK said, only remove the FISHES to the QT (everything else stay in the display tank).
sometime it is tough to get all fishes out, it may not be neccessary to remove all yet in the beginning...
so, you *may* want to try to get only the fishes with itch out first to the QT...
update:
since this red-bug incident, i am a bit paranoia...
about three weeks ago, i got some new acro frags from red sand, and i soak them all in interceptor with high-dosage... then also dip in fresh water for 5 secs...
ouch! next day, found out, half of them - RIP!! :o
after checking...
- i always keep one or two neon goby in my tank to help to keep the ich away... (do NOT get cleaner wrasse, some will tell you they do the same job, the different is leon goby will eat other foods, and the cleaner wrasse will be starve to death after no more itch to eat...)

most likely, as soon as you introduce the 3rd one, they will started to flight! and could be two left, or worse one left.
some other advise to get pictures of clown fish hosting inside the anemone, and post it on the tank, and hopefully the clown know they can do so. (this is not a joke).

i did it about 1.5 year ago, took me almost one week!
you see, it is not that bad, right? it sounds painful... but once you bite the bullet and start doing it... you will very satisfy you did it!! yeah!!

just a note about ground probe, would it really have to be a ground probe? or something similar would be fine? like a titanium-heater, it is metal and already properly grounded?

i only heat mine when i need to do big water change.
i have a 55g container for RO/DI water (ATO also from here), and 35g container for new-salt water.
- the night before i do big water change, i add *extra* salt into the 35g
- then next day, i drain out 50g or so from my sump
- then empty...
