Cooking Clams

So I'm buying 300 clams for Wednesday's Giants season opener and we are looking to steam them in some white wine, garlic, shallot, etc. What's the best way to get the sand out of 300 fresh clams?
 
Put them in a tub fill it with water toss them around. Rinse and repeat as many times as u can. Might b easier to do it it smaller batches. Have fun

If you buy the cultivated clams from a store like wegmans they are very clean. You just have to remove the silt form the exterior, which I do what Nick recommended. I am actually making 100 of them today...

I cook them on th grill. We only get the ba g of 30-36 from Shop Rite, only me and my son eat them. I've never had to clean them, I just check that they're closed, them throw them on the grill until they're open. Then eat. It's worked for me. I didn't know you could steam them.

I don't believe these are cultured clams. I'm getting them from restaurant depot.

So usually the wild clams have a lot of sand in them.
 
We usually put the clams in tin foil with ice, garlic, and rosemary, and close up the tin foil then put it on the grill. The ice melts and steams, then everything opens and the garlic and other ingredients go in. Best way to cook them.

wasn't there some groupbuy stuff i had to pick up from your place steve...I think on WEDNESDAY...yes wednesday I should go pick it up...LOL.
 
Put them in water with salt so that the salinity is close to ocean. Let them sit in that water spitting sand for at least 2 hours. Temp shouldn't matter. One of the advantages you should have is you don't have to use my mom's taste test method for the salt water. She uses regular table salt.

You may want to lightly cover them depending on where they are. They will squirt water all over. If you notice that alot of sand is in the water after awhile, just dump the water and sand and start over. Don't stare at them you will get squirted.

I would also recommend letting them sit in COLD saltwater for a few hours. However, I would use kosher salt. Regular table salt (iodized salt) will kill the clams.
