The new sump has 2 holes for drainage into filter socks/cups. The site states 1" drain but the hole seems to measure 1.25". My drain hose also measures 1.25". The site says sump comes with 1" bulk heads. Do I need the bulk heads? If yes, how do I plumb this?
Any help appreciated.

There should be 1 inch bulk heads in there to tie into the spa flex. The hole is for the bulk head, that's why it's a little bigger. My trigger sump was setup like this. Honestly however you can secure it that you're Happy with, I'd just do that.

Would this work? Blue line is the flex tube and last two straight pieces of PVC would go into the holes on top.

The holes for bulkheads are always 1/4" larger to compensate for the part of the bulkhead that has to go through the hole. The hole in the bulkhead itself takes 1" PVC.

If you have 2 down lines from the tank I'd do 2 of these, or you can just do 1 and run only 1 sock...

Or, if you have a single down line and want to run 2 socks, I'd do this, modified like you mentioned above...

Think my biggest stupidity here how and what do I cannot to the dorso overflow under the tank. There is small piece of PVC sticking out if you can see it in the pic I posted.

Just leave it be. Connect your grey hose to the 1" PVC in the sump bulkhead

It looks like everything will fit nicely in the sump.
Now I can try and grow cheato in the fuge. Plan to blackout the back of fuge section with contact paper.
