Don't they create a shock wave similar to a sonic boom except scaled down. We are not talking fighter jet we are talking about a small claw. That's how they stun food to eat right?

That is how they stun. That claw is also quite powerful. I did see a story where a large pistol was being kept in a smaller tank and did indeed break the glass. I'll try to find it. But this was a larger one, not one if the smallish one more commonly kept.
I've also seen stories where pistols are able to fend off and kill mantis shrimps larger then themselves.
