For the weekend, Smith and Wollensky Steakhouse in NYC released their rub and marinade recipe for their Cajun Rib Steak. Never ate there, but according to steak folks this thing is legendary.
The rub can also be used for burgers.
The Rub
1T cayanne
1T chili powder
1T garlic powder
1T black papper
1T white pepper
1T onion powder
1T paprika
1 1/2 t cumin
1t basil
1t oregano
1t thyme
MIx all above and toast over low heat in pan, until aromatic, approx 3 min. Pour into bowl to cool.
When cool, rub on steak. Place steak in fridge 1 hour.
The Marinade
1-2c oil
1 white onion
1/4c apple cider vinegar
1T brown sugar
1t salt
2T of the Rub mix
Coat steaks in marinade and marinate in fridge up to 48 hours.
Cook
Salt steak before searing at high heat 3 minutes per side
