Thanks Mbodel...Does anyone really know what why the humidity level needs to be at a certain range? Why hummidity is important to preserving wine?

The humidity prevents the cork from drying out, which would allow oxygen in which would causes the wine to turn bitter.

Doesn't keeping the bottle on its side keep the cork from drying out as well??

Just the end where the wine is, but it doesn't stop rest of the cork from drying.
