Like Phyl said, we never shut ours off at the source for any length of time. The one thing I did do, though, was install a John Guest shut off valve in the feed line between the sink and the filter just in case I ever needed to shut it off for a minute or two. It came in handy a few times...

God knows we've had our share of leaks. I especially like the ones from the upstairs tank. They result in water pouring out of a light fixture in our kitchen.
To build on what fishyman said, you can extend the plumbing so it's just at the water line. Put a 90* elbow on the end so that half of the elbow is below the water level and half is above. I've done that on a few drain lines and it really helps with the noise and the bubbles.
