It's all good, just doing the same on my end. There's plenty of LFS in Jersey to shop, so shop where you feel most comfortable. Keep in mind, I'm only talking about fish as I switched to FOWLR. I've shopped at a few other soutern LFS & had bad luck.

If your tank is running successfully and just looking to stock in a different direction, then just sell/trade off the bigger fish and use the cycled tank. If you were possibly planning on starting over, why not just remove rock (into buckets with tank water) making it easier to catch fish...

I've currently got a 200w & 150w in my 180 gallon. I had a single 150w in my 90 gallon, so you'd be somewhere between. Probably 2 - 150w would be good.
I always have just made them from old tanks & glass cut at local glass shop. I just couldn't justify they large cost of the premade sumps. The biggest issue I had was the height of the tank. Custom would give you the option to make it whatever height fits best.

I've had them multiple times with different tank mates. I kind of forget exactly when they were added, i think somewhere in the middle of the order. They hide in the rocks in the beginning, but adjusted fine afterwards.

I used a thin layer of Carib Sea Special Grade for my 180 with a combination of dry rock (reefcleaners) and live rock from my previous tank. The sand was the perfect grade and the dry rock was nice and porous. Very happy with my selection.
