Yeah, the one I saw looked a lot like the first one in those pics (the Yellow Boxfish). He didn't have a lot (if any) yellow but certainly had that look to him.
We got some pretty good shelving units from Sam's. They are a little smaller than those dimensions, though. I think one unit around 8'high x 4' long x 2' deep and the other is around 7' high x 6.5' long x 2' deep.

I don't believe that at all. I think you don't do large volume water changes due to the swing in parameters (sg, alk, pH, etc.) you introduce into the system. I have done what would be considered extremely large water changes a few times and have never had any cycle related issues.
