First I would suggest rinsing the used sand very well in saltwater....you'll be surprised how much gunk is in there. Then to add it to the tank...you can use a container...fill the container with sand, leaving room for water. Then slowly lower it into the tank allowing water to slowly mix with...
I'm not so sure a penny would leach copper at all...but if it will....a penny made from 1909-1982 contained 95% copper...the newer pennies made from 1982-2010 is 97.5% zinc. So a newer penny is safer ;D
Here is what I would personally do.
I'd take 3/4 of the existing sand and clean it VERY well in freshwater. I'd add that to the tank along with new rinsed dry sand.. I'd then take the other 1/4 of your existing sand...clean it well in salt water and add it to the tank.

On top of the sand you have....do you remember what sand you used then?? I use Ocean Direct Carribean Live Sand. But if you are completely cleaning your sand with freshwater, you can save some money and use dry sand and seed it with some existing sand.
I did this when I upgraded from my 55 to 180. The difference is...I didn't care about losing the bacteria in the sand. So I used freshwater to rinse. If you are thinking about re-doing the entire sand bed, then rinsing with fresh water will do the same thing. Keep some old sand to seed it....and...
I think you'll be skating a fine line there. The detritus and all the hydrogen sulfide that is built up in there. I'd be a bit worried!! You may be better of cleaning the sand with fresh water before re-using it, but let's see what others have to say.
