You may not want to hear this but in my opinion you really should step up to a bigger size right out of the pump and step back down just before the fitting in your display tank. If it were me, I would come out of the pump at 1" and immediately step up to 1.5". I'd carry the 1.5" all the way up...
Tom, there should be no problem using flex hose for your drain line.
As far as the sizes, it's hard for me to tell. Honestly, I never tried anything other than what I have so it's hard for me to say what results you'd get with other equipment/sizes.

In our application, I am using a 2" pipe for the drain and 1.5" pipe for the return (we have the same setup of 1" drain and 3/4" return bulkheads). I have no drain problems with the 2" but never tried 1.5, so I have no idea if going with that size will cause you any trouble or not.

I would be reluctant to restrict the flow coming out of your pump. It's really not good for them. The best thing to do would be to come out the the pump and go into a Tee. Have one leg from the Tee go to where ever you are currently planning for it to go (return to the display tank, ect). Put a...
